Food&Drink Writer Cara Scott delights us with her festive favourite – a nut roast perfect for the big day

For me, Nut roast is always a go to for Christmas day dinner, the perfect veggie alternative, especially if you don’t want quorn or other similar meat alternatives and fancy something different. It is also a great source of protein, and adds so much more flavor to your plate.

This is a quick and easy recipe, that anyone could make, and requires a very limited amount of ingredients.

Serves: 4-6

 

Ingredients:

225g chopped mixed nuts

2 tbsp. Ground almonds

100g wholemeal breadcrumbs 

1 medium sized onion

1 small leek

2 tsp (10ml) yeast extract in ¼ pint of hot water 

1 tbsp. sage

30ml vegetable oil

Pinch of Cayenne Pepper

Salt and Pepper

 

Method:

Pre-heat your oven to 180C/350F/gas mark 4

Chop the onion and leek, and make sure all the nuts are chopped if they have been brought as whole.

Sauté the onion and leek in the vegetable oil until soft, not browned.

Place the onion and leeks into a big bowl and add all the ingredients together 

Mix all the ingredients in the bowl

Put the mixture into an oiled over proof dish and bake for 30 minutes until golden brown

Serve, and enjoy your Christmas dinner!
